 sliced Green Cow steak (use sirloin, strip, or flank)
 fresh arugula and spinach
 toasted pine nuts
 shaved parmigiana or pecorino romano cheese
 chopped grilled artichokes
 mini fresh tomatoes slices in half
 Dressing: - good balsamic vinegar and Extra Virgin Olive Oil- equal parts whisked with salt and pepper to taste
